I am a professional Prep Cook in my opinion this is a good place to start if you are looking for a home slicer. I bought this slicer for roasts and cheese. It saves me $4.00 a lb. for sliced beef alone. I find that it is easy to clean and store. For those of you that think this machine is not easy to clean, I use a huge deli meat slicer on average 2 days a week for 5-6 hour a day. The slicer that I use at work takes 30-45 mins. to clean and the parts are very large and hard to handle. The 630 is a breeze to clean. This is my first home slicer and I did a lot of home work before buying the Chef's Choice 630. I am very happy with this product.

After looking over all the slicers, reviews, prices, we decided on this slicer, first one came with a broken part. Sent it back got a new one, it works great. Slices everything, bread, cheese, ham you name it. It doesn't like things too hard or too soft, either breaks whatever it is or pulls the soft stuff into the blade cover. The catch tray is sort of an afterthought, it doesn't fit anywhere and slides around like it has no real home. To clean everything up is a snap, everything snaps out and is real easy to clean up, other slicers have screws to mess with, that's why we got this one, cheap enough to afford yet well built enough to use. Nice slicer.
